Vegan eats!

Continuing my way through my ‘cook the book’ challenge, this week I tried a couple new recipes from the Hot for Food Vegan Comfort Classics cookbook. They are full of good ingredients and surprisingly satisfying and full of protein. Protein is a huge debate when it comes to being vegan. There are many foods that provide an substantial amount of protein- Green peas, nuts, tofu, lentils, seitan, tempeh, nutritional yeast, chickpeas, beans, spelt, quinoa, soy, oats, broccoli, hemp seed and chia seeds.

I don’t abide by a full vegan diet, but I do try to eat vegan or vegetarian at least once or twice a week. I am learning a lot from cooking from this vegan cookbook-not all vegan food sucks! Ha! But seriously I challenge you to try and eat vegan every once and while and you might be surprised at how good it can be and good you feel!

This week I cooked a ‘seafood’ chowder and brownies! Take a look at how they ranked.

Recipe #2 See Food Chowder

Tasty rating: 8/10

I liked the flavour. The only ingredient I wasn’t able to get was hearts of palm and added tofu instead and I didn’t love the adjustment and the texture the tofucreated. I still think I prefer my real seafood chowder but this was still tasty.

Prep and process: 8/10

Follow the recipe! I would follow the recipe exact next time in regards to the correct ingredients. Beside the hearts of palm I did everything like she said to do. I again doubted her and all the extra steps but it turned out delicious and created great flavour. Overall it took me about an hour to cook. It seemed like it timed well though and as I cooked one ingredient I could start the next.

Kitchen disaster: 4/10

It was a bit of a disaster, not gonna lie! I am unsure if it’s the way I cook or if a lot of dishes were needed to make the meal. Once everything was in the pot it was a lot easier. Took 15 minutes to clean up.

Kid approval: 5/10

Tried it but didn’t love it.

Total prep/cooking: 6/10

Took around an hour

Would make again?: 5/10

I don’t know if this is one I would try again.

Final Verdict: 6/10

I liked the meal and so did my friends I shared it with. I however didn’t loveee it. I think I am biased because I love seafood and I would prefer to make my own seafood chowder. I also think that adding the tofu was a terrible choice. I perhaps should try again without adding the tofu I think. Not rushing to make this one tomorrow but I am sure I will try again. I will definitely use the steps of cooking certain things in the oven before adding into the pot. I liked this process.

Recipe #3: Fudgy Brownies

Tasty rating: 9/10

Very tasty! I used stevia in replacement of sugar and still great!

Prep and process: 8/10

Follow the recipe! I’m a terrible baker like I said before. Followed the recipe and it was quick. Maybe 15 mins to prep and 35 mins to bake.

Kitchen disaster: 8/10

Pot, bowl and pan to bake brownies in. A few measuring cups and spoons but everything went into the dishwasher.

Kid approval: 0/10

Didn’t have a child to test these ones on. Sorry!

Total prep/cooking: 8/10

Under an hour. 15 mins to prep and 35 mins to bake.

Would make again?: 10/10

I will make these again. I would like to try with actual sugar and regular flour one day to see the difference.

Final Verdict: 8/10

I again replaced regular flour for coconut flour. I added 1/4 of tsp of baking soda for this change. I switched out the sugar to stevia. I think they would turn out better using the regular flour but I have to avoid wheat. I loved the texture. They were tasty, simple and delish!!

I highly recommend making these!

Nectarine, Raspberry, Tofu & Arugula Summer Salad

There is so much nutritious and delicious local produce in the summer, one of the easiest and most refreshing ways to use them is in a big ol colorful summer salad. This one I whipped up on my lunch break last week. I tossed in some hemp hearts and fried tofu I had left over and that gave me the added protein I needed to get through my busy afternoon of training! This is my fave type of recipe because you don't have to follow it too precisly. You can pretty much toss anything in and it will be tasty!

INGREDIENTS:

  • Arugula/Spinach/Mixed greens
  • Nectarines
  • Raspberries
  • Red pepper
  • Avocado
  • Tofu
  • Hemp Hearts
  • Pumpkin Seeds
  • Goat Cheese
  • Apple cider vinigrette (Apple cider vinegar, avocado oil, lemon, maple syrup, grainy mustard, salt & pepper)

DIRECTIONS:

  • Chop up fruit and veggies, add to a heaping pile of greens, top with seeds, nuts, cheese and tofu. Finish with dressing and tossing it all together.

Vegan Buffalo Cauliflower Burgers

New obsession- the most amazing burger, that isn't a burger! These  Hot For Food  vegan buffalo cauliflower burgers with a creamy ranch sauce are so good, even my meat loving hubby Jeff was tempted to try one. I recently purchased her cook book and I have been enjoying some amazing vegan meals!  This recipe is the best! I've made it a few times now and the flavor and texture blows  my mind. The cauliflower is so good seasoned and baked like this, and the ranch sauce is so fresh and delicious. You won't believe that it's vegan!  I followed the recipe pretty spot on, using fresh herbs makes a huge difference! I found using vegan mayo instead of avocado mayo was preferable for me. The recipe calls for tomato, lettuce and red onion, but you can add other toppings as well. I used avocado and red pepper slices last time. I have a wheat allergy, so I opted for gluten free buns (I used President's Choice GF buns and they were great) but you can use any type of bun (or no bun) you like!  I love finding new healthy vegan options for meals that don't make me feel like I'm missing out on flavor and substance and this one is definitely hearty and jammed packed with taste! Greek Chicken Bowl Meal Prep

How often do you meal prep? For me, it's something I set time aside to do every week because I know if I don't, I put myself at risk for making unhealthy 'in-the-moment' food choices. Meal prepping can seem like A LOT of extra work if you're not familiar with how to make the most out of your ingredients and prep time. What's especially nice about this recipe is how easy and delicious it is! These Greek Chicken Bowls are perfect for lunch on the go or a quick dinner at home and any leftover ingredients can be easily used in other dishes or as snacks on their own! I love snacking on grape tomatoes and cucumbers-- especially when they are fresh from the garden in summer!

INGREDIENTS*

  • 2 cups Water

  • 1 cup Brown Rice (dry)

  • 16 oz Chicken Breast (skinless, boneless)

  • 2 tbsps Greek Seasoning

  • 1 Medium Cucumber (medium diced)

  • 1/2 cup Red Onion (about one medium red onion, medium diced)

  • 2 cups Cherry Tomatoes

  • 2 tbsp Extra Virgin Olive Oil

  • 2 tbsp Red Wine Vinegar

  • Sea Salt & Black Pepper (to taste)

INSTRUCTIONS

  • Preheat the oven to 350F and line a baking sheet with parchment paper.
  • While the oven is heating, bring the water to a boil in a small saucepan. Add the brown rice, reduce to a simmer, cover and let cook for 30 minutes.
  • Once the rice is on, lay the chicken breast on the baking sheet and sprinkle with Greek seasoning. Place in the oven for about 30 minutes, or until cooked through.
  • While the chicken and rice are cooking, dice your cucumber and red onion. Add them to a large bowl along with the cherry tomatoes, olive oil, red wine vinegar, salt and pepper. Mix well.
  • Divide the rice between containers along with the chicken and veggies. Enjoy!

Cranberry Orange Smoothie

I may have a slight obsession with pretty looking smoothies! I love my Vega Protein so when I saw this recipe on the Vega Instagram for a Cranberry Orange Smoothie, I knew I would have to go through my freezer and see if I had any cranberries kicking around! 

This smoothie is delicious and a little tart, which is perfect for mornings when anything overly sweet is just a little too much. The orange is bright and refreshing and makes me feel like summer will be here before you know it!

INGREDIENTS

  • 1 serving Vanilla Vega® Essentials oor 1 serving Vanilla any Vega® plant-based protein powder
  • 1 cup Water
  • ¼ cup Orange Juice
  • ½ cup Ice
  • ½ cup Frozen Cranberries

INSTRUCTIONS

Blend all of your ingredients together in a blender.

Sip and enjoy!
